optionally, toast chipotle pepper flakes in a pan over 🔥 medium heat until fragrent, about ⏲️ a minute.
remove pan from heat and mix in honey. let sit for about ⏲️ 5 minutes. if not using heat, let sit for ⏲️ a couple days.
add equal parts hot water to the infused honey to make a 1:1 syrup. strain out pepper flakes.
combine bourbon, grapefruit juice, and 1/2 oz of chipotle honey syrup into a shaker with ice. shake.
strain into coupe class and garnish with a twist of grapefruit.
