ingredients

  • 2 homemade pie crusts
  • 1 lb skinless boneless chicken breast or thighs
    • cubed
  • 28 oz chickpeas
  • 1 or 2 carrots
    • 1 c sliced
  • ½ small yellow onion
    • 1/3 cup chopped
  • celery
    • ½ cup sliced
  • 1/3 cup (5 tbsp) unsalted butter
  • 1 teaspoon minced garlic
  • 1/3 cup all-purpose flour
  • 3/4 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon dried thyme leaves
  • 1 3/4 cups reduced sodium chicken broth/stock
  • 2/3 cup half-and-half
  • egg wash: 1 large egg beaten with 1 tablespoon (15ml) milk
  • optional: sprigs of fresh thyme for garnish
