  • veggie stock
  • 2 yellow onions, sliced into 1-inch-thick wedges
  • 4 sweet potatoes, diced ½-inch
  • 2 tsp chili powder
  • 2 lemons, one zested and both quartered
  • 2 oz dried cranberries
  • 4 oz arugula
  • ½ c parmesan cheese
  • 1 oz salsa verde sunflower pepitas
  • 2 tsp sugar
  • 1 tbsp vegetable oil
  • 2 tbsp olive oil
